How it’s made
Clean, ripe red cherries are fermented in closed tanks with 96B’s proprietary yeast culture for 120 hours after picking.
Slow-dried for 30 days, in two phases.
Phase 1: whole cherries dried for 3 days, then stored in PE bags for 2 weeks in a dark room.
Phase 2: cherries slow-dried until they reach 12% moisture.
The dried cherries rest in a dark room for 4 weeks before hulling.
