How it’s made
Ripe red cherries are dry-fermented in PE bags for 120 hours after picking.
Depulped until very little mucilage is left.
The depulped cherries soak in clean water in a closed tank for another 48 hours.
Dried for 20 days, in two phases.
Phase 1: depulped cherries are dried under the sun for 2 days, then stored in PE bags for 2 weeks in a dark room.
Phase 2: dried until they reach 12% moisture.
The dried depulped cherries rest in a dark room for 4 weeks before hulling.
