Chemex Brewing Guide: A Smooth First Cup of Excelsa Coffee

Chemex is one of the best ways to introduce someone to Excelsa coffee. The thicker filter softens bolder edges and creates a polished, balanced cup while still preserving Excelsa’s unique personality.

This method is excellent for people curious about Excelsa but wanting a clean and approachable experience.

What You Need

  • Chemex brewer
  • Chemex filter
  • Fresh Excelsa coffee
  • Burr grinder
  • Kettle
  • Scale
  • Timer

Recommended Recipe

  • Coffee: 42 grams
  • Water: 700 grams
  • Grind: Medium
  • Water temperature: 195°F to 200°F
  • Total brew time: 4 minutes 30 seconds

Brewing Steps

1. Rinse Filter

Place filter in Chemex and rinse thoroughly with hot water.

2. Add Coffee

Add medium-ground Excelsa coffee and level the bed.

3. Bloom

Pour 90 grams of water over grounds. Let bloom for 40 seconds.

4. Main Pours

Slowly continue pouring in stages until you reach 700 grams total water.

5. Finish Brew

Allow drawdown to complete around 4:30 total brew time.

Flavor Notes

Expect a clean body with dark fruit character, subtle spice, and softened acidity.

Pro Tip

If brew time runs too long, grind slightly coarser. If it tastes thin, grind slightly finer.
